I tried them last night. I read that you can peel them before cooking them up but that it is an awful job (because of the knobby shape) so I just left them as they were. I steamed them for about 7 - 10 minutes. I ate about 1/2 cup with the skins. Wow! What an great flavour! The flesh and skin is very similar to a potato. The flavour seems starchy, nutty and sweet all at the same time. Then, I peeled the rest. It was very easy to peel them. It is true that the flesh turns mushy quickly and sticky. I then mashed them and added a tablespoon of margarine and some salt. The flavour was great too! Oh, I have to mention, after steaming them, I looked at the water that was left from the steaming procedure, and it was green!! I was really floored and a little perplexed. Why in the world would it be that colour?! This vegetable is kind of golden in colour.
In my previous entry, I mentioned that some people cannot digest this vegetable well, causing sharp belly pain and awful stinking gas. Uh, I think I am one of those people. Rats! So, I am not sure if I want to give some to the rest of my family to try. Perhaps my DH will give it a shot. I don't want to try it with my 2 year old.
I don't think I will grow it again. This belly pain is enough to deter me (especially since I only ate 3/4 of a cup! That adventure is over and more to come!
